Once Upon a Recipe

Hello friends. My mind is full and cluttered today, so rather than fill your screens with my typical mutterings, I thought I would share a passage from a book I’ve been enjoying lately. If you’ve never heard of Melody Beattie’s Journey to the Heart, you should check it out. Journey to the Heart is a book of daily meditations – lovely and inspirational words to guide you on the path towards spiritual growth. If you just rolled your eyes, and spiritual growth isn’t your thang, keep scrolling for a wicked recipe. If you’re intrigued, keep on reading.

Many of my yoga instructors routinely read passages from this book, and during one particular class I connected so strongly to the passage that was shared that I approached the instructor afterwards to ask her what she was reading from. I picked up a copy of the book not long after that…

Katie at the Kitchen Door

Last weekend was a busy one for me.  My cousin’s wedding (congratulations, Danny and Amanda!) was the big event, and I spent most of the weekend catching up with family, drinking margaritas, dancing till my feet hurt, and traveling to and fro.  By the time I got home Sunday afternoon, I was exhausted.  So exhausted, in fact, that the idea of putting together a blog post for my 5pm deadline for Greatist was pretty daunting.  Which is about the time Trevor came to the rescue.  As I sat at the kitchen table bemoaning the state of my creativity as well as the contents of my fridge, half-heartedly throwing out ideas, (“all I have is one eggplant.  I’m just going to cut it up and put it in the oven and call it a day.”), he became a man of action.  He grabbed the eggplant, sliced it, salted it, and began…

The Scrumptious Pumpkin

My husband Chris and I have become addicted to a Mexican restaurant about 10 minutes from our house. We go mainly for one reason: the fresh, homemade guacamole.

Along with it comes, of course, a huge basket of fried tortilla chips.  We never intend to finish off the full basket between the two of us.

But somehow.  I always end up feeling too full for my entrée, peering down at an empty tortilla chip basket (save for those abandoned, too-small-for-dipping, broken-off bits clinging to the napkin at the bottom).

Guacamole just seems to do that to us.  That rich creamy dip combined with those crunchy, salty chips: the combo is just too irresistible.

This is exactly why, up until this summer, I never really made it at home.  I saved the calorie overload for rarer, eating-out occasions.

But then I came up with this recipe for Guacamole Chicken Lettuce Wraps…

Five And Spice

Ok guys, hold onto your hats because this one came out a little unbidden.  In trying to talk about our big plans for what we’re doing next (soon!), I couldn’t help but go into some of the background thinking behind these plans, and it turned into something of a manifesto.  Now, I may be a philosophizer and a wax eloquenter, but I’m not usually one to write a manifesto.  A manifesto will nearly always rub at least someone the wrong way, and I have in general lived my life bending over backwards to try never to rub anyone the wrong way, to please everyone, to be safe.

But I’m finally, finally starting to realize that it’s not worth it.  Not if it means you sacrifice the truth.  The tag line of this blog is “fitting real food into real life,” and, well, it wouldn’t be real life if I…

Quickest Roast Chicken

Next week is my last week in New York City. I’m in the process of packing up my little apartment and sending everything home to Australia where I will join it in September after travelling down the West Coast of America (ROAD TRIP! Sightseeing suggestions welcome…).

New York is a city that changes you. It becomes a character in your story that exerts its influence whether you like it or not. New York made me focus. It made me prioritise what was important in my life, because there is no way you can do everything it offers. I was quite surprised to find that my priorities included simple, uncontrived things: cooking, friends, family, nature. The antithesis to a pulsating metropolis.

When I’ve told seasoned New Yorkers that I’m leaving, a look of pity crosses their faces and they nod in an understanding way. “You couldn’t take the pace”, they state…

The New (Cooking) Adventures of Ole' Bill

Hola World!

Hopefully y’all enjoyin this Olympic Coverage wherever y’all maybe on the planet. Y’all got a favorite event so far?

Me? You aint gonna believe it, but its Rowing. Yep. Rowing.

Fun Fact: I was once a rower. Not an Elite one, I was too short for that. Those guys are HUGE!!!

BUT I rowed in an 8 man boat about 5 years ago. Watching the races brought up good ole-nostalgia.

The Blisters on the hands, The Spandex Uni’s.(Unless you are in good shape, those things will exploit your flaws). Feeling like you may have a heart attack after the race is over.

Oh the memories.

Not sure if y’all been watching, well you should. But watching it, they make it look so effortless. But it aint.

Speaking of effortless, (dig the segway coming up here?) Sherbert is up there.

Now what in the world is it? It’s Ice…

Recipe is adapted from Martha Stewart

2 cups approx. of Raspberries or Strawberries (hulled and chopped)

2 cups approx. of Blueberries

2 Tablespoons sugar

2 cups approx. of Lemon Greek Yogurt – found at most grocery stores

You can use more or less of the fruit and yogurt, it really doesn’t matter.  Each mould is different and some might require more.  My fun popsicle moulds are from Crate & Barrel.

1. In a food processor puree the raspberries or strawberries, add 1 tablespoon of sugar.  Set aside strawberry or raspberry puree in bowl.

2. Next puree the blueberries in food processor, adding remaining tablespoon of blueberries.  Set aside blueberry puree in bowl.

3.  Add puree in popsicle moulds, alternating between strawberries, blueberries and lemon yogurt.  You can either make nice layers, or add flavours randomly and swirl with a skewer for a swirl look and taste.  The lemon yogurt…
